Healthy Stuffed Peppers


*I served with a buttered roll


This recipe is easily one of my favorites. It is so good, easy, and full of flavor! You can also mix and replace ingredients very easily, if you choose.

What you need:
- 4 bell peppers
- 1 lb ground chicken
- spinach 
- 1 can of tomatoes with green chiles

Seasonings:
- salt 
- pepper
- chili powde
- cayenne 
- onion powder

Directions:
1. Preheat oven to 500
2. Season and brown the ground chicken 
3. Mix in the can of tomatoes with green chilies and combine
4. Mix in the spinach and cook until softened
5. Stuff your peppers reasonably
6. Place stuffed peppers in your pan and cover with tin foil for about 20 mins (*Tip - spray your tin foil prior to covering to prevent sticking*)
7. Remove the tin foil and bake an additional 10 mins 


Pineapple Chicken "Wraps"




What you need:
- 1 lb ground chicken
- 1 can tomatoes with green chiles
- 1 cup pineapple
- 3 bell peppers (diced) 
- lettuce boats (can be any type - just ensure it's a good shape to fill)

Seasonings & Sauces:
- onion powder
- pepper
- oregano 
- turmeric 
- garlic salt
- siracha 
- coconut aminos
- apple cider vinegar 

Directions:
1. Season and brown the ground chicken 
2. Add in your can of tomatoes with green chilies and diced peppers
3. Add in your sauces (drizzle evenly) and add 1 tbsp of apple cider vinegar
4. Cook until thickened
5. Once done, dish into your lettuce wraps 
6. Top with pineapple to add sweetness
