4 Autoimmune Protocol Dinner Recipes

As I've talked about before, I have Hashimoto's. Hashimoto's is an autoimmune disease that affects the thyroid. I have had many symptoms and dealt with a lot of struggles throughout the process of trying to heal and figure out what works best for my body. Recently, I started the Autoimmune Protocol Diet (detailed information can be found here). It is pretty restrictive, and it can be very intimidating when first starting out. I wanted to share some really delicious recipes that I've been making and truly enjoying! 
*I've noticed everyone implements things differently so if you're following a similar diet and these don't work, you can omit any ingredients or replace as needed! 

Hamburgers & Fries

Ingredients: 
  • 2 pounds ground beef
  • 1/3 cup water
  • 2 tablespoons coconut flour 
  • 1 tablespoon coconut sugar
  • 2 tablespoons sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder 
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon baking soda
  • Sweet potatoes
  • Splash of coconut oil
Instructions:
For the Fries:
  • Peel the potato skins
  • Slice the potatoes into steak cut fries
  • Place in a bowl with a splash of coconut oil and a pinch of salt
  • Mix together to evenly spread the salt
  • Place in air fryer at 350 for approximately 15 minutes
For the Burgers:
  • Preheat the oven to 375
  • Grease a cooking sheet
  • In a large mixing bowl, combine the ground beef and water
  • In a separate bowl, combine coconut flour, coconut sugar, sea salt, garlic, onion, rosemary and baking soda 
  • Combine the wet and dry ingredients and mix 
  • Form the beef mix into patties and place on the greased baking sheet
  • Bake for approximately 20 mins and then flip
  • Bake for another 15 mins or until the temperate has reached 160 degrees
*I serve/eat my burger over a piece of lettuce from a lettuce head and wrap it to mimic a bun and eat my sweet potato fries with honey!

Thai Kabobs With Pineapple 

(I found this recipe here; however, made some substitutions of my own!)

Ingredients: 
  • 1-1/2 pounds beef sirloin
  • 1 pound pineapple
  • 1/2 onion
  • 1 tablespoon avocado oil
  • 1 tablespoon ground ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon seasalt
  • 2 tablespoons honey
  • 2 tablespoons coconut sugar
  • 1 tablespoon coconut aminos
  • Coconut flakes
Instructions:
  • Preheat oven to 350
  • Dice beef into cubes
  • Marinate beef with the wet and dry seasonings and set aside 
  • If the pineapple wasn’t bought, cubed, now you would want to dice that
  • Dice your onion 
  • Place your beef, pineapple and onion on the skewers 
  • Grease a cookie sheet and place the skewers on the cookie sheet
  • Bake the skewers approximately 10 mins 
  • Sprinkle coconut flakes over the skewers
  • Broil the skewers approximately 10 additional minutes
*recipe can be served with an AIP friendly rice if preferred! 




Brown Sugared Honey Pork Chops W/ Potatoes & Green Beans

Ingredients: 
  • Pork chops (5-6 depending on serving size)
  • Sweet potatoes 
  • Green beans
Instructions:
  • Preheat oven to 350
  • Dice beef into cubes
  • Marinate beef with the wet and dry seasonings and set aside 
  • If the pineapple wasn’t bought, cubed, now you would want to dice that
  • Dice your onion 
  • Place your beef, pineapple and onion on the skewers 
  • Grease a cookie sheet and place the skewers on the cookie sheet
  • Bake the skewers approximately 10 mins 
  • Sprinkle coconut flakes over the skewers
  • Broil the skewers approximately 10 additional minutes

Chicken & Vegetable Soup

Ingredients: 
  • Chicken (4-5 chicken breasts)
  • 1/2 bag of spinach
  • 2 carrots (chopped)
  • 2 celery (chopped)
  • 4 cups chicken broth
  • 1 tablespoon minced garlic
  • 1 tsp parsley
  • 1 tsp Italian seasoning 
  • 1/2 onion (diced)
Instructions:
  • This one is very easy and I simply used my crockpot and combined all ingredients! I cooked on high for approximately 4 hours!
