Three Easy Crockpot Dinners

Hi everyone! I don't know about you but I love my crockpot. I love the convenience and somehow, everything turns out SO GOOD. 

With the holidays ramping up, it can be tough to keep up with planning, shopping, attending events, and all the extras! I wanted to share some of my favorite easy crockpot recipes for those nights that you don't want holiday leftovers and you don't want to spend a ton of time and energy cooking a full meal. 

Crockpot Chicken Fajitas

What you need:
3 bell peppers
1/2 a medium sized onion
2 packets of fajita seasoning (or you can make your own)
2 limes
2 lbs boneless chicken breast 
Tortillas
Toppings of choice such as cheese, sour cream, hot sauce, etc

Instructions:
1. Cut your bell peppers and onion into small strips and place these at the bottom of your crockpot
2. Season your chicken with the fajita mix and any additional seasonings of your choice. Make sure to season both sides of the chicken breast.
3. Lay the chicken breasts over the vegetables 
4. Cook on high for 3-4 hours - OR if using the low setting, about 6 hours
5. Once the cooking time has completed, remove the chicken breasts and shred the chicken
6. Once the chicken is shredded, place the shredded chicken back in the crockpot and mix the contents 
7. Serve in a warm tortilla and add the toppings of your choice! 


Crockpot Creamy Chicken

What you need:
2 cans cream of chicken soup
2 tablespoons of sour cream
3/4 can of water
3-4 chicken breasts
Jasmine rice (optional)

Instructions:
1. Place your chicken breasts along the bottom of the crockpot
2. Add the sour cream and cream of chicken and spread evenly across the tops of the chicken
3. Add the water
4. Cook on high for 3-4 hours - OR if using the low setting, about 6 hours
5. (Optional) Serve in a bowl over rice



Buffalo Ranch Chicken Tacos

What you need:
3-4 chicken breasts
1 cup of wing sauce (Franks)
1 packet of ranch seasoning
Tortillas

Instructions:
1. Place your chicken breasts along the bottom of the crockpot
2. Sprinkle the ranch seasoning packet over the chicken
3. Add the wing sauce 
4. Cook on high for 3-4 hours - OR if using the low setting, about 6 hours
5. Once the cooking time has completed, remove the chicken breasts and shred the chicken
6. Once the chicken is shredded, place the shredded chicken back in the crockpot and mix the contents 
7. Serve in a warm tortilla and top with mozzarella cheese or add some ranch dressing!
